Chocolate cake with Olive Oil
Ingredients
½ cup brewed coffee or espresso
½ cup unsweetened cocoa powder
3 large eggs
1 cup sugar
¾ cup Kefi Life extra-virgin olive oil
2 teaspoons vanilla extract
1½ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt
confectioner's sugar for dusting
fresh fruit for topping
Instructions
Sprinkle cocoa powder over hot coffee and stir together to breakup any clumps.
Beat the eggs and sugar for about 2 minutes. Slowly drizzle in the olive oil, vanilla and the cocoa-infused coffee and continue beating the mixture.
Combine dry ingredients then, gently fold into the liquid ingredients.
Pour the batter into a 9-inch springform pan lined with parchment paper and sprayed with non-stick cooking spray.
Bake at 350⁰F for 35 to 40 minutes.
When cool, dust with powdered sugar and garnish with fruit.
