Chocolate cake with Olive Oil

Ingredients

  • ½ cup brewed coffee or espresso

  • ½ cup unsweetened cocoa powder

  • 3 large eggs

  • 1 cup sugar

  • ¾ cup Kefi Life extra-virgin olive oil

  • 2 teaspoons vanilla extract

  • 1½ cup all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon sea salt

  • confectioner's sugar for dusting

  • fresh fruit for topping

Instructions

  1. Sprinkle cocoa powder over hot coffee and stir together to breakup any clumps.

  2. Beat the eggs and sugar for about 2 minutes. Slowly drizzle in the olive oil, vanilla and the cocoa-infused coffee and continue beating the mixture.

  3. Combine dry ingredients then, gently fold into the liquid ingredients.

  4. Pour the batter into a 9-inch springform pan lined with parchment paper and sprayed with non-stick cooking spray.

  5. Bake at 350⁰F for 35 to 40 minutes.

  6. When cool, dust with powdered sugar and garnish with fruit.
