INGREDIENTS

  • 2 red peppers (cut in quarters- remove seeds)

  • 2 green peppers (cut in quarters- remove seeds)

  • 1 bag green beans (snap the ends off)

  • 1 bag baby carrots (use whole)

  • 4 Chinese eggplant (peel stripes of skin then cut into 1⁄4 inch slices) 3 zucchini (peel stripes of skin and then cut into 1⁄4 inch slices)

  • 6-8 yellow potatoes (peel and cut into round slices like pin wheels) 1 red onion (cut into fours)

  • 1 yellow onion (cut into fours)

  • 1 bunch parsley (trim stems and cut into small pieces)

  • 8 cloves garlic (cut into small pieces)

  • 1 can diced tomatoes

  • salt & pepper

  • 1 cup Kefi L!fe extra virgin olive oil

DIRECTIONS

  • Rinse all vegetables

  • Add vegetables, as you are chopping and slicing them, into a 21x13 size aluminum pan.

  • Pour Kefi L!fe extra virgin olive oil over all vegetables, add diced tomatoes, salt and pepper to liking.

  • Mix entire contents with your hands (after you’ve washed them).

  • Cover pan with foil and bake at 350 for one hour, then remove foil and stir cooking uncovered for an additional 30 minutes.
