INGREDIENTS
2 red peppers (cut in quarters- remove seeds)
2 green peppers (cut in quarters- remove seeds)
1 bag green beans (snap the ends off)
1 bag baby carrots (use whole)
4 Chinese eggplant (peel stripes of skin then cut into 1⁄4 inch slices) 3 zucchini (peel stripes of skin and then cut into 1⁄4 inch slices)
6-8 yellow potatoes (peel and cut into round slices like pin wheels) 1 red onion (cut into fours)
1 yellow onion (cut into fours)
1 bunch parsley (trim stems and cut into small pieces)
8 cloves garlic (cut into small pieces)
1 can diced tomatoes
salt & pepper
1 cup Kefi L!fe extra virgin olive oil
DIRECTIONS
Rinse all vegetables
Add vegetables, as you are chopping and slicing them, into a 21x13 size aluminum pan.
Pour Kefi L!fe extra virgin olive oil over all vegetables, add diced tomatoes, salt and pepper to liking.
Mix entire contents with your hands (after you’ve washed them).
Cover pan with foil and bake at 350 for one hour, then remove foil and stir cooking uncovered for an additional 30 minutes.
