Joanne’s Garden Green Beans

INGREDIENTS

  • 2 pounds green beans

  • 1 medium red onion

  • 2 tsp tomato paste

  • 2 organic Yukon yellow potatoes

  • Kefi Life extra virgin olive oil

  • Water

  • Salt and pepper

DIRECTIONS

  • Take green beans snip ends and washthoroughly

  • Drizzle Kefi Life evoo to bottom of pot

  • Put stove on medium heat

  • Toss in clean beans

  • Sautee and stir the beans with a spatula

  • Add salt and pepper as you are stirring and to taste

  • Add the chopped medium red onion to the beans and keep stirring

  • Five min later add chopped potatoes to mix

  • Keep stirring and sautéing until onion is wilted

  • Drop in two tsp tomato paste and continue the Sautee with entire mix

  • Add water to cover beans keep simmering at medium heat

  • May have to add a 1/3 c water if it dissolves and ingredients are not cooked

  • Cover and pot and keep heat at medium and let the beans simmer slowly

  • Taste as going along to see when done

  • Cook with patience & love
