Fakes — Lentil Soup
INGREDIENTS
1lb brown lentils
2 medium-sized onions, finely chopped
2 medium-sized potatoes, cubed
2 carrots, cubed
3 celery sticks, finely chopped
2 tbsp. finely chopped parsley
3 garlic cloves, finely chopped
2 bay leaves
8 cups water
1 cup Kefi L!fe EVOO
12 oz tinned tomatoes, puréed, or 2 tbsp. tomato paste diluted in ½ cup water
salt and freshly ground black pepper
2 tsp. oregano
SERVES: 6 to 8
DIRECTIONS
In a large saucepan, cover the lentils, onions, potatoes, carrots, celery, parsley, garlic and bay leaves with cold unsalted water.
Boil for 30 minutes, or until all the vegetables are tender.
Add the EVOO, puréed tomatoes (or diluted tomato paste), & salt and pepper to taste.
Boil vigorously for five minutes more, stirring occasionally. The soup should be fairly thick.
Stir in the oregano.
Serve with olive oil and vinegar, to be added to individual taste at the table.
