Romanian Cabbage Soup

INGREDIENTS

  • 1/2 cabbage (cored and coarsely chopped)

  • 2 yellow onions (diced)

  • 1 Red pepper (diced)

  • 1 carrot (diced)

  • 2 tomatoes (diced)

  • 1 bunch Cilantro - save the stems (chopped)

  • Juice of 2 lemons

  • 1 container of mushrooms (diced)

  • Parsnip (diced)

  • 1/2 head of Garlic (minced)

  • 3 tbsp of Kefi Life® EVOO

DIRECTIONS

  1. In a large pot, sauté onion & tomato with 3 tbsp of Kefi Life® EVOO

  2. When onion changes color, add the cabbage and 3 liters of water

  3. Stir in the rest of the veggies one at a time

  4. Add diced cilantro stem (not leaves)

  5. Simmer for 20 min

  6. Turn off heat and add salt, pepper, lemon juice & cilantro leaves

  7. Cover and let soup sit for 20 min to cool down

  8. If you like it hot, add paprika to taste
