Greek Beets & Greens

INGREDIENTS

  • 6 beets with greens attached

  • 4 garlic cloves (minced into small pieces)

  • 1/4 cup of Kefi Life® EVOO

  • 1/4 cup of red wine vinegar

  • Salt and pepper to taste

DIRECTIONS

  1. Rinse beets and greens well to remove any dirt.

  2. Cut the greens (leaves) off of the beet heads and boil the beets for approximately 1.5 hours.

  3. In a separate pot, boil the greens on medium heat for 20-30 minutes or until soft. Remove immediately as to not turn dark.

  4. Drain and place greens in a bowl.

  5. After 1.5 hours, drain beats, rinse and trim off ends.

  6. peel the outer skin and cut into quarters or slices.

  7. Drizzle with Kefi Life® EVOO and add red wine vinegar, garlic, salt & pepper.

  8. Mix, serve, and enjoy!
