Kefi Potato Salad

INGREDIENTS

  • 2 small scallions chopped

  • 3 cloves finely chopped garlic

  • 3 TBS lemon juice

  • 1 bag baby Yukon potatoes

  • Kefi Life® extra virgin olive oil

  • Finely chopped dill

DIRECTIONS

  1. Wash potatoes and cut them into fourths.

  2. Boil potatoes until the tines of a fork easily slide out of the potato when pierced (still slightly firm).

  3. Whisk together the olive oil, lemon juice, garlic and herbs, shallot or red onion

  4. Add the warm potatoes and gently toss (with your hands) to combine. Taste test for salt & pepper and adjust if needed.
