INGREDIENTS
4 1/2 cup flour
1 tbsp. baking powder
1/2 cup almonds (chopped)
1/2 cup coconut (chopped)
1 tbsp. anise seeds
1 cup Kefi Life® EVOO
1/2 stick butter
1 1/3 cup sugar
2 tbsp. brandy
1 cup orange juice
1 tsp. baking soda
DIRECTIONS
Pre-heat oven to 350°F
Mix together flour, baking powder, almonds, coconut, and anise seeds and set aside
Add EVOO, butter, sugar, and brandy into mixer and beat together well
In a separate glass, add orange juice and baking soda. Once baking soda dissolves, empty quickly into the mixer and continue to mix for 1 minute
Slowly add in dry ingredients. If dough is sticky, you can add more flour
Divide the dough in half.
From half the dough, form 5 like small rolls about an inch in diameter and as long as the length of the cookie sheet
With a chef's knife, score the rolls diagonally, half an inch apart.
Bake them at 350° for about 20 minutes.
Remove from oven and cut cookies where you had them scored
Turn them on their side on cookie sheet and bake at 300° for 15 minutes
Repeat with the other half of the dough
