INGREDIENTS

  • 4 1/2 cup flour

  • 1 tbsp. baking powder

  • 1/2 cup almonds (chopped)

  • 1/2 cup coconut (chopped)

  • 1 tbsp. anise seeds

  • 1 cup Kefi Life® EVOO

  • 1/2 stick butter

  • 1 1/3 cup sugar

  • 2 tbsp. brandy

  • 1 cup orange juice

  • 1 tsp. baking soda

DIRECTIONS

  • Pre-heat oven to 350°F

  • Mix together flour, baking powder, almonds, coconut, and anise seeds and set aside

  • Add EVOO, butter, sugar, and brandy into mixer and beat together well

  • In a separate glass, add orange juice and baking soda. Once baking soda dissolves, empty quickly into the mixer and continue to mix for 1 minute

  • Slowly add in dry ingredients. If dough is sticky, you can add more flour

  • Divide the dough in half.

  • From half the dough, form 5 like small rolls about an inch in diameter and as long as the length of the cookie sheet

  • With a chef's knife, score the rolls diagonally, half an inch apart.

  • Bake them at 350° for about 20 minutes.

  • Remove from oven and cut cookies where you had them scored

  • Turn them on their side on cookie sheet and bake at 300° for 15 minutes

  • Repeat with the other half of the dough
