Roasted Oregano Chicken

INGREDIENTS

  • Whole organic chicken (ask butcher to cut in half)

  • 10 yellow potatoes (peel and cut into quarters)

  • 1⁄2 cup Kefi L!fe extra virgin olive oil

  • 1 1⁄2 cup water

  • 2-3 lemons

  • 2 tbsp oregano

  • 2 dash paprika

DIRECTIONS

  • Take chicken and clean it out, removing the little livers and cut excess fat of the behind.

  • Place the cut and cleaned out chicken in a 21x13 Aluminum pan.

  • Place cleaned and peeled, cut potatoes around the chicken.

  • Pour Kefi L!fe extra virgin olive oil over the chicken and potatoes.

  • Add the water and squeezed lemon juice.

  • Sprinkle the oregano and paprika over food, seasoning both sides of chicken.

  • Cover with tin foil and cook for one hour at 450 degrees.

  • Take the foil off and cook uncovered another 30 minutes at 400 degrees.
