Simply Delicious Eggplant

INSTRUCTIONS

  1. Dump whole tomatoes with sauce into frying pan

  2. Add garlic, basil, olive oil, salt & pepper and stir.

  3. Let slowly simmer on low heat.

  4. Place over tomato mixture and let simmer again about 10 min.

  5. Remove entire mixture and pour into oven proof cast iron or regular cookware to bake until eggplant soft and squishy and sauce absorbed and blended.

  6. Pour recipe into serving bowl and enjoy as entree or side to a protein.

INGREDIENTS

  • 5 Garlic cloves chopped

  • 2 bunches basil torn into small pieces

  • 1 large can cento whole tomatoes

  • 2 or 3 medium eggplants sliced into 1/2 inch pieces

  • 2 tbsp Kefi Life EVOO

  • Salt & pepper
