Thea Nancy’s Chili
INGREDIENTS
3 tbsp Kefi Life® EVOO
1 lg. onion, diced
3 cloves garlic, minced
2 lbs. ground beef or turkey
2 bell peppers, chopped (1 red, 1 yellow)
1 can (20 oz.) diced tomatoes
4 tbsp chili powder
1 tsp salt
1 bay leaf
1/4 tsp basil
2 cans (1 lb. 4 oz. each) kidney beans, drained
DIRECTIONS
sauté onion & garlic in EVOO
add meat to pan & cook til brown
add remaining ingredients (aside from kidney beans)
cover & let simmer for 1 hour, stirring occasionally
add beans & cook for 15 minutes, uncovered
serve with chopped onion, jalapeño, shredded cheese, sour cream (or greek yogurt), and corn or tortilla chips!
