Tuna Salad Stuffed Peppers
DIRECTIONS
Pre-heat oven to 350°F
Drain tuna & add to large mixing bowl
Roughly chop up pickles, red onion, and celery and add to mixing bowl
Add mustard, mayonnaise, salt, & pepper
Add juice of 1 lemon + 1 tbsp EVOO
Mix together, chopping ingredients up more as you mix
Slice the top off 2 red bell peppers & clean out inside
Fill peppers with a generous amount of tuna salad
Top with seeds, nuts, or other ‘crunch’ of choice
Drizzle with EVOO
Cook for 30-45 minutes or until peppers are at desired tenderness

2 cans Bumble Bee Solid White Albacore Tuna
1/2 cup Pickles
1/2 cup Celery
1/3 cup Red Onion
2 Red Bell Peppers
4 tbsp Mustard
3 tbsp Mayonnaise
1 Lemon, Juiced
3 tbsp of Kefi Life® EVOO
Seeds or Nuts of Choice
