Tuna Salad Stuffed Peppers

DIRECTIONS

  • Pre-heat oven to 350°F

  • Drain tuna & add to large mixing bowl

  • Roughly chop up pickles, red onion, and celery and add to mixing bowl

  • Add mustard, mayonnaise, salt, & pepper

  • Add juice of 1 lemon + 1 tbsp EVOO

  • Mix together, chopping ingredients up more as you mix

  • Slice the top off 2 red bell peppers & clean out inside

  • Fill peppers with a generous amount of tuna salad

  • Top with seeds, nuts, or other ‘crunch’ of choice

  • Drizzle with EVOO

  • Cook for 30-45 minutes or until peppers are at desired tenderness

  • 2 cans Bumble Bee Solid White Albacore Tuna

  • 1/2 cup Pickles

  • 1/2 cup Celery

  • 1/3 cup Red Onion

  • 2 Red Bell Peppers

  • 4 tbsp Mustard

  • 3 tbsp Mayonnaise

  • 1 Lemon, Juiced

  • 3 tbsp of Kefi Life® EVOO

  • Seeds or Nuts of Choice
