Yiayia Nancy’s Tzatziki

INGREDIENTS

  • 3 cups full fat Greek yogurt

  • 1 English cucumber

  • 2 tbsp fresh dill, chopped

  • 2 tsp fresh mint, chopped

  • 2 cloves garlic, pressed or grated

  • 1 tbsp lemon juice

  • 2 tbsp Kefi Life EVOO (separated)

  • salt & pepper to taste

DIRECTIONS

  • Grate cucumber, on a course grater, into a tea towel or cheese cloth. Strain out all liquid and set aside.

  • In large mixing bowl, combine yogurt, cucumber, dill, mint, garlic, lemon juice, 1 tbsp of the Kefi Life EVOO, and salt & pepper.

  • Top with remaining 1 tbsp of EVOO

From Ted — Tzatziki is a creamy, garlicky cucumber spread. It is so versatile that it can be used to dip marinated chicken or pork into, as a topping for Gyro sandwiches, or even strong enough to stand alone as a spread for fresh bread, pita, or pita chips. My mom, Nancy, had the most amazing tzatziki recipe when I was growing up. Her recipe for this dish is my favorite and goes perfectly in all of the scenarios above.
