Kefi Village Salad

INGREDIENTS

  • 2 vine-ripened tomatoes

  • 1 english cucumber

  • 1 red onion

  • 8 oz. block imported Feta cheese cut into cubes

  • 24 pitted Kalamata olives

  • lemon juice

  • 2 tbsp Kefi L!fe extra virgin olive oil

  • 2 tbsp red wine vinegar

  • 1 tbsp fresh dill, minced

  • 1 tbsp dried oregano

  • drop of dijon mustard

  • salt & pepper to taste

 

INSTRUCTIONS

  • Slice tomatoes, cucumber, and red onion into chunks or wedges

  • Lovingly scatter veggies into a bowl with feta and olives

  • For dressing, shake vinegar, EVOO, dijon mustard, lemon juice and herbs together in a jar

  • Pour dressing over and toss together

  • Enjoy!
